is left over when milk is coagulated. It is one component of the milk
protein. The other is casein. The balance between whey and caseins
proteins is 1 : 4.
By-product of coagulated milk is curd - milk protein - casein. Then it
remains still liquid and it is whey. It has a yellow-green color. And it
is raw material used in the production of whey protein. Whey protein is
the fastest absorbable source of protein.
