1. Place 1 sheet of nori on the rolling mat.
2. Spread cooked and seasoned sushi rice over the nori, leaving 1cm gap at the top and bottom of the nori sheet.
3. Add your sushi filling to the centre of the nori with rice on.
4. Roll the mat away from you, tucking in the top of the nori to make a roll.
5. Once the roll is made gently press on the mat with both hands to help secure it's shape.
6. Lightly wet / dampen the point where the nori overlaps itself, to help seal the roll.
7. Finally, using a moistened sharp knife, cut the roll into 5 or 6 pieces.
